Vegetables I will eat

This list is growing all the time:

  1. Lettuce - especially Romaine
  2. Pea Pods
  3. Snow Peas
  4. Asparagus
  5. Raw Carrots
  6. Celery
  7. Corn
  8. Onions
  9. Green Beans are ok if cooked so they are still very firm.
  10. Mushrooms
  11. Green Peppers
  12. Red Peppers (Yellow and Orange are ok too)
  13. Raw broccoli (especially cut very small and with lots and lots of veggie dip or on that veggie cream cheese pizza thing. Basically, if it's barely noticeable, and the only veggie offered, I might eat it.)
  14. Tomatoes - if they are in something like a sauce or a bruschetta- yes, I know they are technically a fruit, but you know as well as I do that they are really vegetables. I will not just pop a cherry tomato in my mouth.
  15. Spinach- fresh leaves (also good if it's in something like dip, lasagna, etc)
  16. Sweet potatoes
  17. Butternut squash (also pumpkin, but it's not like that is served as a side dish)
  18. Artichokes- though really, I only like them in dip, with lots of melted cheese and stuff. But still, totally counts right?
  19. Cucumbers! I forgot about cucumbers.
  20. And Avocados! (thanks Jen!) I never used to like them, but now I love them.

(What about yellow and orange peppers? I see green ones made the list, and green are more bitter than the other two.)

No airlea- I think it's grown since I've known YOU - my friends have made me try all kinds of things (but they have never ever been pushy about it)
Ms. H- I think I've only occasionally had yellow or orange peppers, but I like them just fine.

What about avocados? I know those are also technically a fruit but I think of them more a vegetable. And sprouts, do you like sprouts on your sandwiches and salads?

I'm going to be picky and point out more than just the tomatoes on the list are fruit. Seeds = fruit, right? Yes, I am that big of a pain in the keester.
I agree on the yellow, red and orange peppers over the green. They actually have more vitamins vs the green as well!
Everything is better with dip or in dip form.
